Edinburgh’s diners will get rare opportunity to sample the Glorious Cuisine of Goa presented by the master chefs of Suruchi Restaurants from 15th of March till 2nd of April. ‘Suruchi’ which in most Indian languages means great taste, regularly hosts food festivals showcasing culinary regions of India.
Goa is India’s most popular holiday destination and is renowned for its sandy white beaches, warm sun, easy going people and great food. Goa’s cuisine is an interesting mix of varied influences. The long period of Portuguese rule, besides that of the Muslim and Hindu kingdoms, has left an indelible influence on the original style of Goan cooking and this has led to an exotic mix of truly tasty and spicy cuisine. People who sample Goan cuisine, enjoy this different and unique style of food which has a distinct and unique combination of spicy flavours.
Portuguese influenced dishes include Galina Cafreal (chicken marinated with traditional green spices), Prawn Balchao (tangy prawns pickled with chillies and vinegar. Chilli, cashewnut, coconut, coconut milk, tamarind, fresh seafood and a plethora of spices are also used seductively.
Indian cuisine in particular was heavily influenced under the Portuguese. The most notable spice that they introduced to India via Goa was chillies, which they brought from South America.
